Soup Beans and Corn Bread

A Southern Cold Weather favorite!
(makes about 4 quarts)

Ingredients:
a large Yellow Onion, chopped
a few Tbsp Bacon Grease to saute the above
3-5 slices Salt Pork, rough dice
a pound Great Northern, Navy, or other small, white bean, soaked overnight
a medium Carrot, grated
Smoke flavoring, Optional
a "Ham Base Paste" Optional
You might try some Sage in this

Prep:
In a 4-quart kettle, saute the Salt Pork until browned
add the onions and Caramelize
add water and simmer a few hours -- you can add the Ham Base now, if you want.
add the soaked beans and simmer untill they're done. I mash some of the beans up to thicken the soup some. Serve with Corn Bread.

Corn Bread

You can buy a box of instant, or a sack of Corn Meal that has the recipe on it. Some like it with lots of sugar, some not... Smile

thats the kind of stuff i was raised on, 'cept my great grandma always had some sort of ham hock pig's foot thing in the pot for flavor.

Idea try making the cornbread with a small can of creamstyle corn added. makes it very moist (cornbread can be on the dry side) and adds the fun of corny surprises inside the bread
