My Nannie's Fudge

My nannie used to make this fudge every year. After she died I searched through all of our cookbooks to find it. With the help of my brother we finally got the recipe and I want to share it with you all so it will always be around.

Skillet Fudge
2 ounces unsweetened chocolate
2 cups granulated sugar
1/2 teaspoon salt
1/3 cup light Karo® syrup
1/2 cup milk
1 teaspoon vanilla extract
2 tablespoons butter
1 cup chopped nuts (optional)

Place first 5 ingredients in large cold cast iron skillet. Let come to a full rolling boil and cook to 236 degrees F, stirring constantly with a wooden spoon.

Set aside to cool to lukewarm (110 degrees F) without stirring.

Add butter and vanilla extract. Beat with mixer for 8 minutes on low speed. Add nuts, if desired. Pour into buttered dish or pan and score.

When cool, cut into squares.

Makes about 1 1/4 pounds.

you lost me with the "score" part.
what exactly are we scoring? is this "special" fudge? Laughing

Scoring the fudge is like drawing deep lines without cutting through. Makes it easy to break pieces off when it cools down. Cool

You reckon it'll taste just like Nannie's fudge? It doesn't have any Nannie spice in it. Razz Hehe I'm gonna pass this on to Mama and see if she's got a good skillet for it. Very Happy

Hey Posey if you have a better copy of Nannie's fudge recipe please put it up here. The one I got is the closest thing I've found from all the recipe notes that mama had.

I don't think we have a different recipe. I was just referring to the fact that it won't taste just like Nannie's cause *she* didn't make it. Razz

that's just referring to the fact when "nannie" or grandma makes things it aways tastes better Wink
