Many years ago, I was a member of the 'upper management' of the Subway sandwich chain. When I grew tired of having a sub, there was a 'tavern' down the road from the office; I'd get a Reuben, fries, and this coleslaw they served. I call it 'Polish' Coleslaw, as it was a Polish Tavern...

1 head Cabbage, thin shredded
1 medium- large Onion, chopped
Garlic, chopped, to taste
Salt (helps wilt the veggies)
Olive Oil
Cider (or other -- Malt, Balsamic, Red/White Wine, etc) Vinegar
Horseradish -- the grated kind, this recipe has *NO* mayonnaise in it

Prep:

This is a real "seat of your pants" recipe. For an 8 or 9" diameter Cabbage, I'd probably chop a 4" diameter Onion, as well as an entire head of Garlic...

Toss these together with a couple tablespoons of Kosher or Sea Salt , then add the Oil and Vinegar, tossing again.

I'd probably add about 4 tablespoons of the grated Horseradish to this, again tossing it to mix it in. You really have to let it sit overnite to let the flavord meld.

This is a recipe you really have to play with, so I'd start with a small cabbage and a small onion, and just a bit of the other ingredients, until you get the flavors to balance to your palate.
